14 Days | 6 Cities | 1 Country | an Italian adventure
What a year. Ups, downs, and all around. I am so ready for a new adventure.
Sorrento | Capri | Rome | Siena | Florence | Venice
I can already taste the pizza, pasta, wine, and smell the cobblestone (that isn’t just a preconceived notion right?). Almost there…

An Open Letter to Everyone I Love
Why doesn’t the feeling of victory last forever? We are so hard on ourselves as humans that we forget to live in the moment and appreciate life’s mini successes. So today, I’m going to allow myself to appreciate the glory of this life that God, my family, and my friends have given gifted me. You are all that matter. I appreciate you all!

#Happy Thoughts
This weekend was the start of Spring Break in Minneapolis and so far I have zero complaints. The weather has been beautiful (besides a downpour this morning) and I have kept great company.
Friday
- Puppy Cuddling
- Dinner: Crab Legs
- Watch the Gophers lose in the Big Ten Tournament
Saturday
- Fail at replicating a Pinterest recipe because I was stubborn and wanted the eggs to be over hard instead of sunny side up.
- Go for a beautiful 6 mile run with the beach calling my name even though it’s not ready for me yet
- Buy too much at LOFT
- Dinner at BLVD
- Veg on the couch with Bella
Sunday
- Go for a 4 mile run - Legs feel like jelly
- Tackle a mountain of laundry
- Go for a family bike ride on a sweet neon bike - Does this count as doing two-a-days?
- Head back to school
- Spend the evening with friends around a “campfire” (12 inch grill, if I am being generous)
Monday
- Run in the pouring rain, but the Stone Arch Bridge never disappoints
- Work, work, work

Stuffed Bell Peppers. Enough said.
I can’t wait until I have money one day to justify spending money on Quinoa, but until then brown rice is a pretty decent substitute. Find the original recipe here.
Now please wipe that drool off your keyboard. Grody.
